Black Bean Burgers

Ingredients

  • 1 can black beans, drained

  • 1 carrot, grated

  • 1 onion, diced

  • 3 medium potatoes grated

  • 1 cup sweetcorn

  • ½ tsp garlic salt(or puree, adjust to taste)

  • Salt and pepper

  • 1 Tsp mixed herbs

  • 2 tbsp olive oil (for frying)

Method

  • Mash the beans

  • Add all the remaining ingredients (except the oil) with a generous sprinkle of salt and pepper

  • Make the mixture into small patties about ½ inch thick

  • Fry the patties in the olive oil over a medium/high heat for about 3 minutes on each side


 

Serve with mug bread/pitta bread or on their own with salad and/or tomato relish.
