Healthy Truffles


  • ½ cup smooth peanut butter

  • ¼ cup of cocoa powder

  • ¼ cup of honey

  • ¼ cup of coconut oil

  • 1 teaspoon of butter (optional)

  • 1 teaspoon of vanilla bean paste

  • ¼ cup unsweetened coconut flakes, or more as needed



  • Combine peanut butter, cocoa powder, honey, coconut oil, butter and vanilla bean paste in a saucepan over low heat; cook, stirring constantly until melted and smooth (around 3-5 minutes) Transfer mixture into a bowl.

  • Place mixture in the fridge and stir it every 5 minutes until it is firm and sticky, but still soft enough to shape, this usually takes around 15 minutes

  • Pour coconut flakes into a bowl - place around 1 teaspoon of truffle mixture into the flakes and roll to coat, repeat till all mixture is used and covered. 

  • Place in fridge until firm.
