Mug Bread

Micro Bread in a mug

 

This is made in the microwave and is not really ‘bread’ at all but a seed/nut mixture – a great source of both fibre and protein and good for savoury/sweet snacks or lunches.

 

Ingredients

  • 2 tsp coconut oil

  • 1 large egg

  • 2 tbsp ground almonds or ground walnuts (or a mixture)

  • 3 tbsp ground golden flax seeds

  • ½ tsp baking powder

  • Pinch salt

Method

  • Microwave the coconut oil for 20-30 seconds until melted and then use it to grease the sides of the mug

  • In a small bowl, thoroughly mix together the egg, 2 tsp water, the nuts, ground flaxseed, baking powder and salt. Pour the mixture into the mug and stir with a fork to incorporate the coconut oil, making sure the top is level.

  • Microwave for 1 minute on high. If it is still very moist microwave for a further 10-20 seconds.

  • Tip the bread out of the mug, if necessary loosening with a knife. If it is still runny at the bottom put it back in the cup and microwave for a further 10-20 seconds

  • Allow it to cool for a few minutes on its side, and then cut it into slices.
